Incubation Conditions for Fenugreek Whole Seed

Abstract
For high yields of monohydroxysapogenins from Trigonella foenumgraecum Linn. (Fenugreek) seed, the conditions of incubation, prior to acid hydrolysis, were studied. Using these conditions: temp. 45° C, initial pH 4.0, with aeration and shaking for 4 days, a 90% increase over the control (acid hydrolysis alone) was achieved. The Naringinase D sample containing naringinase (a rhammosidase) and 5% pectinase acted faster than and also supplemented the seed's endogenous enzymes. The reasons for the increase in the sapogenin yields are advanced.
