Summary
The characteristics and fatty acid composition of three important varieties of Syrian olive oil obtained from different localities were determined. The influence of oil refining and bleaching was studied. A sample of Syrian sulphur olive oil was also investigated using chemical and spectrophotometric methods of analysis.
